Vegan Chocolate Truffles

Truffles

Lets face it, everyone loves chocolate. If you, for some god awful weird reason are not a chocolate fan, than I genuinely feel as if our virtual friendship is doomed to fail.

I am trying, however, to avoid all dairy products for health reason and it can be quite challenging as most of the “deliciously good” chocolate has milk in it so I do sometimes have to scrape the barrel for some good healthier alternative and was just oh so very delighted with how this came out. Hopefully you’ll love it as much as I did 🙂

Truffles How To

What you’ll need:

250 Gr Dark chocolate (none dairy, preferably 70% or higher)

2 Tbs Coconut Oil

225 ml (1 cup) Coconut milk

1 Tsp Vanilla Paste

1 Tbs Coconut Sugar (or regular sugar)

Pinch of salt

2 Tsp Cocoa Powder

Optional: 1 Tbs Chocolate Liquor

Garnish:

1/4 cup Unsweetened Coconut Flakes

or

1/4 cup Cocoa powder

How To?

Melt the chocolate thoroughly on a double boiler or a microwave with the coconut oil. After mixture is even, add the rest of ingredients to the batch and than just mix everything together until batter is even and smooth. Afterwards cover and leave to cool in fridge for 2-3 hours.

To shape the truffles, just use a cup of water with a spoon or ice cream scooper to, well, scoop it out and pat it in with your garnish of choice-  Simple as that and now your done! I suggest letting it rest in the fridge for another half an hour before actually taking your first bite, though i won’t blame you if you fail
